Bosenberg's Baharat (for Kefta & Shawarma)

“One of EVERYTHING short of the kitchen sink” kefta recipe (4 patties)

ONE POUND ground beef or lamb or both or veggi-meat

ONE CUP freshly chopped stemless herbes (parsley (¼ cup), Fenugreek (¼ cup), Mint (¼ cup), & Cilantro (¼ cup))

ONE Garlic

ONE finely grated onion

ONE TABLESPOON “Lebanese Seven Spices” (Cumin (1 tsp), Nutmeg (1 tsp), Ginger (1½ tsp), Allspice (½ tsp) , Cloves (1 tsp), Cinnamon (½ tsp), Ground Black pepper (1 tsp))

ONE&ONE TEASPOON salt & Paprika(Smoked)

Finely chop or mince the onions in a food processor and strain the liquid/juice that comes out of them. This is important to get rid of, otherwise the meat paste will be loose and won’t hold together easily.

Finely chop the parsley, Mint, & Cilantro leaves (discarding the stems)

Let rest in fridge for at least 1 hour

Mix all ingredients well together and make into patties

Fry

Serve with tzatziki dressing in pita and a glass of juice
