1 packet (2½ tsp (8g)) of dry active yeast (has the activity equivalent to a 0.6 oz (17g) cake of natural yeast) will raise 1 lb (ca. 490g ~ ca. 3½ cup ~ ca. 828ml) of flour in one hour
Three such packages is equivalent to a 2 oz cake
Rule of Thumb: A small tsp yeast to each cup of flour
